
Miso Salmon Rice Cooker

A simple one-pot meal that combines wild salmon, mushrooms, vegetables and Japanese flavours into a nourishing, protein-rich dinner. Everything cooks together in the rice cooker, making it perfect for busy weekdays.

Ingredients
- 2 wild salmon fillets (about 150-180 g each)
- 1 cup Japanese short-grain rice, rinsed
- 1¼ cups chicken stock or water
- 150 g shimeji mushrooms
- 1 carrot, sliced
- 2 tbsp white miso
- 1 tbsp tamari or naturally brewed soy sauce
- 1 tsp sesame oil
- 1 tsp grated ginger
- 1 spring onion, sliced
- Toasted sesame seeds (optional)
Cooking Method
- Rinse the rice and place it in the rice cooker.
- Mix the stock, miso, tamari and grated ginger until smooth. Pour over the rice.
- Arrange the mushrooms and carrot over the rice.
- Place the salmon fillets on top.
- Drizzle with sesame oil.
- Cook using the normal rice setting.
- When finished, let it rest for 10 minutes.
- Gently flake the salmon into large pieces and fold everything together.
- Garnish with spring onions and sesame seeds before serving.
