A colourful Korean-inspired rice bowl layered with garlic-marinated beef, spinach, bean sprouts, mushrooms, carrots and a sunny-side egg, finished with a savoury-sweet gochujang sesame sauce.

Ingredients

  • 2 rice cups Japanese short-grain rice
  • 200g beef, thinly sliced
  • 8 cloves garlic, minced, divided
  • 3 tsp light soy sauce, divided
  • 2 tsp honey, divided
  • 8 tsp sesame oil, divided
  • Sesame seeds, to taste
  • 1 carrot, cut into very thin strips
  • 6 shiitake mushrooms, sliced
  • 1 handful Chinese spinach
  • 200g soybean sprouts
  • 2¼ tsp salt, divided
  • Black pepper, to taste
  • Cooking fat or oil, for sautéing
  • 2 eggs
  • 4 tbsp gochujang paste
  • 2 tbsp sesame oil
  • 1 tbsp honey

Cooking Method

  • Cook the Japanese short-grain rice in a rice cooker according to the cooker instructions.
  • Marinate the sliced beef with 2 cloves minced garlic, 2 tsp light soy sauce, 1 tsp honey, 2 tsp sesame oil and sesame seeds.
  • Bring a wok of water to the boil. Blanch the Chinese spinach for about 1 minute, remove and squeeze out excess water. Cut into shorter lengths.
  • Season the spinach with 2 cloves minced garlic, 2 tsp sesame oil, ¼ tsp salt and sesame seeds.
  • In the same wok, blanch the soybean sprouts with 2 tsp salt over medium-high heat for about 5 minutes. Drain and mix with 2 cloves minced garlic and 2 tsp sesame oil.
  • Sauté the carrot strips with a little cooking fat or oil and ¼ tsp salt until softened. Remove and set aside.
  • Add 2 cloves minced garlic and the sliced shiitake mushrooms to the pan. Season with 1 tsp light soy sauce and black pepper. Cook for about 2 minutes, then remove.
  • Sear the marinated beef in the same pan until just cooked through. Season with black pepper and set aside.
  • Fry 2 eggs sunny-side up.
  • Make the sauce by combining 4 tbsp gochujang, 2 tbsp sesame oil and 1 tbsp honey.
  • Divide the cooked rice between two bowls. Arrange the beef, spinach, bean sprouts, carrot and mushrooms over the rice.
  • Add about 1 tbsp gochujang sauce to each bowl, top with a fried egg and finish with sesame seeds.
